This cheeseburger soup recipe has a longer ingredient list, but they’re all very simple ingredients. There’s nothing crazy here. So here’s what you need:

  • Large russet potatoes
  • Yellow onion
  • Shredded carrots
  • Celery
  • Beef broth
  • Lean ground beef
  • Italian seasoning
  • Minced garlic
  • Salt
  • Black pepper
  • Shredded cheddar cheese
  • Flour
  • Milk

Step By Step Directions

This recipe makes 6 servings. It takes about 15 minutes of prep time and 6-8 hours cook time.

Step 1. Peel and dice the potatoes. Chop the onion.

Step 2. Add the potatoes, onion, carrots, celery, beef broth, Italian seasoning, garlic, salt, and pepper to the slow cooker.

Step 3. Cook on LOW for 6-8 hours or on HIGH for 4-6 hours until the potatoes  and vegetables are fork tender.

Step 4. About 45 minutes before serving, brown the ground beef in a large skillet on medium-high heat.

Step 5. Drain the excess grease from the ground beef and add the flour.

Step 6. Cook for 1-2 minutes. Add the milk and stir consistently. Cook the mixture for a few minutes until it thickens. It will be similar to a gravy.

Step 7. Add the meat mixture to the slow cooker and then add the shredded cheese. Stir to combine.

Step 8. Cook for the remaining time (30 minutes) until the cheese has melted. Serve and top with your favorite toppings.

Leftovers Storage & Reheating

Aloow leftover soup to cool completely then you can store it in an airtight container in the refrigerator for 3-4 days. Reheat individual servings in the microwave or on the stove top until heated completely.

Tips & Tricks

  • Add “cheeseburger toppings” to your soup when serving for extra fun. You could even make a topping bar with things like pickle slices, crumbled bacon, shredded lettuce, sauteed mushrooms, chopped tomatoes, chopped green onions, sour cream, and extra cheese.
  • Please note that the soup will also thicken more as it cools. When reheating, if you feel your soup is too thick, you can add a bit of broth or water to thin it out.
  • You can hide extra veggies in this soup so easily! Try adding chopped spinach or kale with your other vegetables. You can also try cauliflower, mushrooms, and bell peppers. Chop them and toss them in with the rest of the veggies!
  • If you want a leaner crock pot cheeseburger soup, you can substitue ground turkey or ground chicken for the ground beef.
  • To tweak the flavor a bit, try different types of cheese. You can try sharp cheddar cheese, Monterey Jack, or Colby jack. You can also try Velveeta cheese!
