This Malteser Rocky Road is packed with crunchy, honeycombed Maltesers enrobed in creamy milk chocolate alongside mini marshmallows.
It’s a great little treat to make for fans of the classic malty confectionary, and it’s only takes a few minutes to make.
All you’ll do is melt chocolate, butter and syrup together, then stir in Maltesers and mini marshmallows before pressing the mixture into a lined tin, topping with yet more Maltesers, and then chill overnight.
When you turn your Malteser Rocky Road out and and slice it into squares, you’ll reveal the most delightful pattern inside – a true Malteser celebration!

Ingredients
- 400 g (14.1 oz) milk chocolate
- 100 g (3.5 oz) salted butter
- 100 g (3.5 oz) golden syrup
- 50 g (1.8 oz) small marshmallows vegetarian, if required
- 450 g (15.9 oz) Maltesers
Instructions
Line a square 18cm (7″) nonstick cake tin with baking paper.
Put the milk chocolate, butter and golden syrup in a large heatproof bowl.
Melt gently in the microwave (in 30 seconds blasts) or over a bain-marie and stir until melted and smooth. Allow to cool a little – if the chocolate is hot, it’ll melt the additions.
Add the marshmallows and two thirds (300g / 10.5oz) of the Maltesers.
Stir well until everything is evenly coated.
Tip the mixture into the tray lined with baking paper. Press to level off.
Top with the remaining (150g / 5.5 oz) Maltesers, pressing down lightly.
Place in the fridge for at least 2 hours or overnight to set.
Once set, cut into 16 squares and enjoy.
