I had the opportunity to host a Christmas luncheon for all of the teacher assistants in the preschool where I work. As I thought about a menu for these precious ladies using various local restaurants and caterers – nothing felt sufficient!

I wanted the meal to be extra special.

These women pour their lives out to serve the youngest, bringing joy and the Gospel to our preschooler’s hearts each day.

I decided they deserved a homemade meal.

The main course needed to be strong, so I thought of this incredible chicken stuffing casserole recipe that my mom always takes to people when they have a need.

Recipe – Chicken Stuffing Casserole

Serves: 8-10

Ingredients

  • 5-6 cups cooked chicken, cut into chunks
  • 2 cans sliced water chestnuts, chopped
  • 2 cups celery, chopped
  • 2 cups mayonnaise
  • 1 can Cream of Mushroom soup
  • 1 stick butter
  • 1 small bag Pepperidge Farm Stuffing
  • Slivered almonds

Instructions

  1. Mix first 5 ingredients together. Place in a lightly sprayed 9 x13 baking dish.
  2. Melt the butter and mix with the stuffing.
  3. Sprinkle the stuffing mixture on top of the chicken mixture.
  4. Sprinkle the slivered almonds on top.
  5. Bake at 350 degrees for 35-40 minutes.
